No French wine divides opinion quite like Vin Jaune. Made in tiny volumes in one of the country's smallest regions, it's unlike anything else on the shelf — closer in style to fino sherry than to any other French white. What Makes Vin Jaune Different

Vin Jaune ("yellow wine") is made exclusively from the Savagnin grape in the Jura, France's smallest and most idiosyncratic wine region. After fermentation, the wine is aged in oak barrels for a minimum of six years and three months — without topping up the barrel as wine evaporates, the traditional practice used everywhere else in winemaking. Left exposed to air, a film of yeast called the voile forms on the surface, protecting the wine from oxidation while giving it its signature nutty, curry-spice, walnut character — the same biological process behind fino and manzanilla sherry, arrived at independently in a landlocked corner of eastern France.

Vin Jaune is always bottled in the clavelin, a distinctive 620ml bottle — smaller than standard because so much wine is lost to evaporation during the long, unornamented ageing.

Château-Chalon: Vin Jaune's Grand Cru

Within the Jura sits Château-Chalon, a small appellation permitted to produce nothing but Vin Jaune — no other wine may legally carry the name. It's the benchmark expression of the style, and a genuine rarity even within Jura's small production.

Vin Jaune is a wine built for food. The classic Jura pairing is Comté cheese, aged 18 months or more — the wine's walnut and curry notes echo the cheese's own nuttiness. It's equally at home with poultry in cream and Vin Jaune sauce (poulet au vin jaune), morel mushrooms, lobster, and dishes with a curry or turmeric edge. Once opened, a bottle holds well for days or even weeks in the fridge, thanks to the same oxidative ageing that shapes its flavour in the first place — and unopened, well-stored Vin Jaune can age for decades.
