The Burgundy Pyramid
Burgundy is structured as a quality pyramid with four levels:
Regional (Bourgogne AOC) — The entry level. Wines labeled simply "Bourgogne Rouge" or "Bourgogne Blanc" can come from anywhere in the region. Quality varies enormously by producer. A great Bourgogne from Domaine Bruno Clair will outperform a mediocre Village wine every time.
Village (e.g. Gevrey-Chambertin, Meursault, Chambolle-Musigny) — Wines from a single village. This is where Burgundy's character begins to emerge. Prices range from HK$400 to HK$1,200.
Premier Cru — Wines from specific, named vineyard plots within a village, recognised as superior terroir. Prices typically HK$800 to HK$2,500+.
Grand Cru — The pinnacle. 33 Grand Cru vineyards in Burgundy, each producing wines of the highest expression of terroir. Names like Chambertin, Clos de Vougeot, Corton-Charlemagne, Montrachet. Prices from HK$1,500 to several thousand.

Under HK$600 — Domaine Samuel Billaud Chablis, Domaine Fernand et Laurent Pillot Chassagne-Montrachet Village.
HK$600–1,200 — Domaine Bruno Clair Marsannay Rouge, Domaine Henri Gouges Nuits-Saint-Georges Village.
HK$1,200–2,500 — Domaine des Lambrays Morey-Saint-Denis 1er Cru, Domaine Tollot-Beaut Corton Grand Cru.
