Her approach in the cellar is equally thoughtful and minimal: indigenous yeast fermentations, full malolactic conversion, aging in a mix of oak barrels, stainless steel, and wooden vats, and no fining or filtration. Sulfur additions are kept to a minimum or omitted entirely. Among her standout cuvées are “Le Mont Chainqueux,” a Blanc de Noirs from old Pinot vines planted by her grandparents in 1965; “Chétillon de Haut,” a pure, mineral-driven Blanc de Blancs from Le Mesnil-sur-Oger; and “Les Coullemets,” a structured Grand Cru Chardonnay from a prized family parcel. Élise also crafts limited cuvées under the "Vibration" label—such as MX19 and ML18—designed to express the energy and identity of specific parcels. With her deep respect for the land and a quiet confidence in her craft, Élise Bougy is quickly gaining recognition as one of Champagne’s most compelling new voices.
Elise Bougy’s winemaking journey began with her studies in Dijon, where she absorbed a broad spectrum of techniques and philosophies. Though she initially pursued a path in the commercial side of the wine world after graduation, she was drawn back in 2016 to take over her family’s estate. With a naturally curious and charismatic spirit, Élise set out to produce wines that reflected both her personality and a deep respect for nature.
She began with just two cuvées, sourced from two exceptional vineyard sites: Les Chétillons in Le Mesnil-sur-Oger and Mesneux in the Montagne de Reims. From the outset, she farmed organically, eventually achieving biodynamic certification in 2021. Her commitment to purity is evident—she vinifies without the addition of sulfur, crafting wines of precision and vitality.
Since taking the reins, Élise has expanded her range with the “Hors-Norme Vibration” series, which showcases the finest grapes from her best parcels. These wines are aged sur lie for four years and then rest an additional six months post-disgorgement before release—only when Élise judges them to be at their optimal point for drinking.
