Philipponnat 'Réserve Perpétuelle' Brut. NV Champagne built on a perpetual reserve system dating to 1946, roughly two-thirds Pinot Noir from the Mareuil-sur-Aÿ terroirs Philipponnat is known for. Toasty, vinous, and layered in a way most NV Champagne isn't. Pour to start the meal or alongside the first course off the grill.
Domaine Samuel Billaud Chablis 'Les Grands Terroirs' White 2022. 100% Chardonnay from three sites bordering Billaud's grand cru holdings, lees-aged without oak. Pure apple and lemon fruit with real tension. The house white for oysters, grilled fish, or just on its own.
Domaine Jonathan & Didier Pabiot Pouilly-Fumé 'Léon' White 2023. Sauvignon Blanc with the flint and chalk that separate serious Pouilly-Fumé from the generic version, citrus and white peach over smoky minerality. Built for goat cheese, grilled shrimp, or anything with herbs.
Château Barbeyrolles Côtes de Provence 'Pétale de Rose' 2021. A Saint-Tropez estate rosé, Grenache-Mourvèdre-Cinsault off shale soils, pale and aromatic with peach, strawberry, and a touch of spice. The BBQ rosé of the box, works across the whole spread.
Domaine Frédéric Mabileau Saint-Nicolas-de-Bourgueil 'Les Rouillères' 2023. 100% Cabernet Franc from the Mabileaus' original 1983 planting, biodynamic, partial carbonic maceration. Juicy dark cherry and raspberry with a savory, peppery edge. Serve slightly chilled with grilled sausage or burgers.
Château Simard Saint-Émilion Grand Cru 2015. Merlot/Cabernet Franc off limestone-clay next to Château Pavie. The 2015 has settled into its tannins, truffle and dried plum coming through. Reserve it for steak off the grill or the last bottle of the night.
