Bright citrus, gooseberry and delicate white flowers on the nose, with a stony, flinty streak typical of the appellation. The palate is dry and crisp, showing lime zest and stone fruit alongside saline mineral notes, carried by vibrant acidity to a clean, precise finish.

More About The Winery

Domaine Jonathan Didier Pabiot sits in Pouilly-sur-Loire, across the river from Sancerre, and represents five generations of the Pabiot family working vines in the appellation. Rather than finish formal wine school, a young Jonathan chose an apprenticeship at Domaine Léon Barral in Faugères — an early, formative exposure to organic and biodynamic farming that he brought back to the family’s Loire vineyards on his return in the mid-2000s.

The domaine now farms roughly 18–20 hectares across five communes of the appellation — Les Loges, Villiers, Charenton, Tracy and Saint-Laurent — spanning the three soil families that define Pouilly-Fumé: Kimmeridgian marl, chalky caillottes limestone, and clay-over-silex, the flint that gives the appellation its signature smoky character. Jonathan converted the estate to organic farming in 2010, then to biodynamic (Biodyvin/Demeter) in 2016, becoming the first certified-biodynamic domaine in Pouilly-Fumé.

‘Léon’ — named for Jonathan’s son, and making up roughly 70% of the domaine’s production — is the estate’s flagship Pouilly-Fumé, blended from mature vines planted across all three soil types and vinified in a mix of concrete, stainless steel and barrel, aged on the lees to build texture while preserving freshness.
