More About The Winery

Cellier des Dames is a boutique Burgundy project founded in 2019 by François Bannier and Gregory Hecht, inspired by their early experiences working in Burgundy. Based in Mercurey in the Côte Chalonnaise, the winery focuses on crafting precise, terroir-driven Chardonnay and Pinot Noir from limestone and clay soils, with an organic approach in the vineyards.

Working across multiple parcels, the philosophy is to produce elegant, accessible Burgundy wines that highlight freshness, purity of fruit, and the character of each climat. Fermentations are carried out with indigenous yeasts, and élevage is handled with a restrained use of oak to preserve balance and transparency.

The name “Cellier des Dames” pays tribute to the historic “Dames de Bourgogne,” symbolizing the heritage and spirit of the region. The range spans Bourgogne and Côte Chalonnaise appellations, including Mercurey, Givry, and Rully, with wines designed to reflect classic Burgundian finesse and drinkability.
