More About The Winery
Camille & Guillaume Boillot is a young domaine, founded around 2021–2022 in Meursault, that sits directly inside two established Côte de Beaune winegrowing families. Guillaume is the son of Henri Boillot, of the well-known Maison/Domaine Henri Boillot in Volnay and Meursault, where he worked before starting his own project. His wife Camille, née Violot-Guillemard, is the fifth generation of a separate winegrowing family based in Pommard, where her father Christophe Violot-Guillemard runs the family estate.
The couple farms a small base of owned vines alongside carefully sourced fruit across the Côte de Beaune, with holdings and purchases spanning Meursault, Puligny-Montrachet, Pommard, Volnay, Auxey-Duresses, and regional Bourgogne Côte d’Or bottlings, up through Meursault 1er Cru ‘Les Charmes’ and Puligny ‘Les Enseignières’. Farming is sustainable and free of pesticides.
In the cellar, the whites are made with close attention to the type and timing of pressing, minimal bâtonnage, and a restrained hand with new oak, while the reds are vinified using vinification intégrale — whole-berry, whole-barrel fermentation — for gentler extraction and greater aromatic precision. Camille has described the guiding aim as minerality, body with delicacy, precision and beautiful maturity, with the couple’s children already increasingly involved at harvest.
