Domaine Jonathan Didier Pabiot is a family estate based in Pouilly-Fumé in the Loire Valley. Jonathan Pabiot took over the domaine in the mid-2000s and quickly shifted the vineyards to organic farming, followed later by biodynamic practices. His philosophy focuses on precision, vineyard health, and minimal intervention to fully express the identity of each terroir.
The estate is planted exclusively to Sauvignon Blanc across a mosaic of soils including flint, limestone, and clay. These varied terroirs give the wines their distinctive character, particularly the classic smoky, flinty minerality that defines top Pouilly-Fumé.
In the cellar, fermentations rely on native yeasts, with careful élevage designed to preserve freshness, purity, and tension.
