After training in hospitality and then at the Lycée Viticole de Beaune, François d'Allaines spent 3 years in a wine house in Beaune specializing in estate wines. He founded his own company in 1990 to buy and sell wines that he personally selected. Since 1996, the François d'Allaines house has been responsible for the vinification of grapes and sometimes musts from fine terroirs. Vinification, ageing and bottling are done entirely under his control in the cellars of the estate in Demigny. Balance and purity, essential to allow the terroir to fully express itself, remain Francois' top priority. He specialises in the wines of the Côte de Beaune and the Côte Chalonnaise buying from growers with whom he has built long relationships and who share his respect for the terroir. His wines include a Rully and a Puligny Montrachet (Tete de Cuvee '07).
