The second wine of Château Ausone is impressive in its own right. It reflects the fruitier, Merlot side of the vineyard, with ripe black fruits coming through the tannins. Winemaking
Grapes are manually harvested and carefully sorted. The wine undergoes plot-by-plot vinification in small wooden vats, with gentle extraction through rack-and-return and gravity-fed pumping over. The wine is then aged for 20 months in new French oak barrels stored in underground quarries.
