2020 Domaine Jonathan Didier Pabiot - Pouilly-Fumé 'Prélude' x 2
Biodynamic. Cropped from the domaine's younger vines, Prélude is the first Pouilly in the range--yet even at this level, shrewd yields and precise organic farming elevate this above the norm. From a selection of lieux-dits, the vineyards cover the gamut of Pouilly's soil types including, limestone, silica and flint. The grapes are primarily whole bunch pressed, with some crushing for structure, and ageing takes place in stainless steel tanks, on the lees, for between 6 to 8 months.

2019 Domaine Jonathan Didier Pabiot - Pouilly-Fumé 'Florilege' x 1
Biodynamic. Florilège is the estate's calling card, an assemblage of mature vines rooted in the Domaine's three key soil types: caillottes, terres blanches and silex. The cuvée Florilège is made with all our older vineyards from all of our terroirs limestone, clay-limestone and flint. The wine is aged in stainless stell and concrete tanks on the lees of fermentation for 12 to 18 months.

2019 Domaine Jonathan Didier Pabiot - Pouilly-Fumé 'Predilection' x 1

Prédilection comes from a parcel of vines planted on terres blanches, or Kimmeridgian marl. Plot planted on terraces by my father and facing south-southwest. On the hillside, this plot benefits from a micro climate influenced by the steep drop in height and the proximity of the Loire. After fermentation the wine stays on the lees in concrete tanks for 18 months, protected from vibrations and temperature variations.

2018 Domaine Jonathan Didier Pabiot - Pouilly-Fumé 'Eurythmie' x 1
For this cuvée, created in 2008, they are selecting a plot planted on Kimmeridgian marls and another plot planted on a flint terroir. Aging takes place for 12 months in demi-muids ( 500 liters) and barrels ( 228 liters) then 6 months in stainless steel tanks to settle. 

2019 Domaine Jonathan Didier Pabiot - Pouilly-Fumé 'Utopia' x 1 
This cuvée comes from a plot of old vines planted on Kimmeridgian marls. Because the best jams are made in old jars ( french proverb ). This wine in aged in our oldest barrels between 10 and 15 years old. Since I started working, I have vinified a few barrels using the natural method, without inputs, in order to better understand my wines. Understand when they are sensitive, and when I have to be careful. In 2017 I decided to bottle our natural wine and create our cuvée, Utopia.
