Biodynamic. Florilège is the estate's calling card, an assemblage of mature vines rooted in the Domaine's three key soil types: caillottes, terres blanches and silex. The lieux-dits are Les champs de Cris, Asserts, Villiers and Les Champs Piot, all densely planted at 10,000 vines per hectare. The vineyards are farmed organically, and to make a wine of this depth and character, Pabiot crops his vines at 30 hectoliters per hectare.

The winemaking here takes on more intricacy, with 90% of the crop fermented and raised in concrete cuve and stainless steel and with 10% barrel fermented juice blended in for complexity. This cuvée spends at least 12 months on lees building texture and retaining freshness. Expect a wine of engaging citrussy clarity to go with its succulent, satin texture, subtle stony minerality and a nip of phenolic to grip the palate. The cool nights of the 2019 harvest helped keep the freshness locked, and it finishes with a lick of limestone salinity and fine tension.

Tasting notes: Made with the intent to be consumed in its youth, it’s a pure and refreshing white, with gracefully rippling orchard fruit flesh and tantalizing fruit flavors of nectarine and white flowers all held together by the zingy, chalky acidity.

Pabiots's 2019 Pouilly Fumé Florilège comes from old vines selected from virtually all the vineyards of the family domain. The wine opens with a ripe and intense, quite warm yet vital bouquet with yeasty and flinty notes of ripe pears. Deep and with super ripe fruit on the palate, this is a full-bodied, aromatic and attractive Pouilly that doesn't develop the complexity and length of a great Pouilly but reveals fine tannins that will give good structure to age over a couple of years. A blend of parcels across Pouilly-Fumé, mainly on limestone-clay soils, the 2019 Florilege is a step up from Prelude due to the inclusion of older vines and longer aging on lees in both tank and concrete. The nectarine-fruited expression gently caresses the mouth. It has lovely depth on the mid-palate, a sense of weight and ripeness followed up by a sense of easy texture derived from mainly clay and limestone soils. The appellation Pouilly-Fume is mainly known for white wines that are floral and fruity. There, the terroir is an association of a semi-continental climate with millions of years old soil. The ground is made up of Kimmeridgian marls, hard limestone and flint giving a mineral, fine and bright aspect to the wine. The soil in the vineyard are plowed mainly in winter and in early spring to respect the structure of the soil while the plant is growing. Their plots have the particularity of being planted mainly on hillsides, steep slopes, or even terraces. The vines are planted on different types of soil, mainly limestone, limestone rocks and shell limestone (kimmeridgian marl). These exceptional terroirs are the base of the minerality in their wines. Being close of the Loire, their wines grow in a special micro-climate which is unique to our area. All the vineyards have been cultivated organic since 2006 and biodynamic since 2016. They work with great attention to details and with much care on every step of the vinification of the wines. They always adapt the way of working to respect the plant and it’s natural cycle. Only a healthy plant can produce well balanced wine.
